So I noticed something interesting, the T/X Baja suspension package looks like the Bilstein 6112/5160 struts and shocks. Were they the predecessors to these? Then I see the 2015 TRD Pro which has a similar strut/shock setup as the T/X Baja. What differences are there? Has anyone noticed any issues from T/X Baja or '15 TRD Pro suspensions?

TRD TX Baja Suspension Kit w/ Bilsteins(PTR13-35120)
TRD Pro Suspension Kit for Toyota Tacoma!(PTR13-35150)

But now the 2017 TRD Pro has split from the Bilstein monopoly and went with Fox 2.5 Internal Bypass shocks. Wonder how TRD 2.5's differ from regular 2.5's? Are they that much better than the 2015 TRD Pro's Bilsteins?

I'm wondering the same thing. I have the 2016 and was looking at the 6112s but they don't include a dust cover for the front shocks. After looking at the 2015 pro suspension it looks to be the 6112 but not sure if they include the different ring stops to lift/lower the suspension. If so it would be nice to get the TRD kit as it comes with the red spring dust covers and TRD markings keeping it factory looking.

Eric you can order the dust covers separate pretty cheap from either any auto parts store or you could always call Bilstein and ask what they recommend.

The TRD branded Bilstein's are not height adjustable like the 6112's, as in they lack the extra grooves. TRD branded Bilsteins, Pro and Baja, are a tuned set. Also the front shocks are driver/passenger side specific as the perch is different to account for Taco lean. 6112's are built to allow flexibility depending on a wider application.

    Baja springs are Eibach 650lb

Pro springs are Eibach 600lb, softer

Press releases say Bilstein actually based the TRD Baja setup on their 9100 series shocks, this is also likely true for the Pro setup as well. 6112's came later and both the 6112 and the TRD setups share 60mm pistons and the bodies appear very closely related. It goes without saying internals are tuned different.
