So I've been eyeing dash cams but they seem to be kinda big and bulky but the ones that aren't seem to be more expensive, also they seem to limit the amount of cameras you can use.

How would one go about this?
I'd like 4 cameras (All 4 sides of the vehicle) all feeding to the same box located somewhere in the vehicle, no need to view it immediately (So no screen) but maybe using a 32-64 GB flash drive for storage (flash seems to be much more reliable than standard HDD) so you can it out and put it in a computer to view it.

You sir are describing the exact product I would like as well. While I don't necessarily need 4 cameras, having 2 would be nice, and not having the stupid mini screen that all of them seem to come with.

I've read somewhere about a raspberry pi dashcam project. Do a Google search you should find something.

Jake, you might find a video surveillance guy and pick his brain - at that point you're way into that realm as opposed to a "dash cam" type setup.

You'd need a DVR to record the data and store it and 4 cameras, I can get this stuff at cost and looked into getting a small system (2 cameras) for my driveway and front yard area and it was super pricey.

Sky is the limit on camera quality, of course. I think you'd be best served getting info from that type of installer than one specific for vehicles, at least until/unless you find someone who is implementing that type of system into a vehicle.

I had a cheap dash cam in my old RSX and I never needed it but I loved having it. I have been looking into getting a good one when I get a taco and this is by far the best solution I have found.
It is only 2 channel but does almost everything I would like / need it to do.

here is a good review of it.

The only thing I wish it would have or the option is to have a camera under the pass. a pillar facing the drivers side in case anyone would break in a steal items. But the little camera you posted would be perfect for that now to figure out how to get it all set- up.
