Sounds like someone didn't prep the door correctly. I have seen like a 5" backset on a door knob (like way old school) and we have ordered some ~3" extensions to make a standard latch work. If it is in fact 3" instead of 2 3/4" you should probably buy a jig and redrill the hole, then get a wrap-around or some kind of beauty plate to cover the gap.... I'm a locksmith btw...

Oh you may also be able to mortise/chisel out 1/4" on the door face where the latch goes so it will line up, and then just build up your strike (maybe stack 2 strikes on top of each other) on the door jam so the latch still engages

Not sure what prep is involved but here’s a pic with a standard dead latch

as you see it’s off and measured center of hole to edge of door and it’s 3 inches

Where is the hardware that came off the door?

I guess it will be hard to chisel out a metal door...

I feel like that was a commercial door and most likely had a latch system like this. The knob or lever engages the end of the latch instead of going through it like a residential knob.

Find a local locksmith and get a grade 2 knob or lever... There actually is a grade 3 (residential) set... LSDA called it a "10 series" and it works the same way

40+ yrs dealing with door hardware and don't ever recall anything with a 3" backspace. If it was me, I'd alter the bore to fit the 2 3/4" and then try to find an oversize escutcheon to fully cover the bore.
