What can cause the same draft beer to taste so different bar to bar.

Improper handling and storage at the bar maybe. Not sure. What beer specific?

This. Also a big factor is the age of the keg. if your beer doesnt sell well, it can go bad. and the gas blend, although not a huge factor (100% co2, 60/40 blend, or nitro

    Yep.

I know a lot of people who won't drink draft beer because they used to work at bars. Bottles only.

Draft beer gives me a raging headache unless it is quality (such as Murphys, Carlsberg, etc.). I can literally drink canned beer all day with no hangover or headache, but just one bad draft can ruin my day.

NASTY DIRTY LINES! The beer companies will do it for free but the owner doesn't hold them accountable to do it. Lines should be cleaned and flushed monthly at the very least!! As well the taps need to be cleaned regulary or mold will grow very quickly.

    ????

Keg beer and canned beer are the same, most breweries bottling and kegging out of the same tank at the same time.

Dirty lines is correct, we clean our lines weekly, and tap heads every 3 weeks.

I've always attributed it to the carbonation, but I'm no scientist...I don't really know why.

They start out equal carbonation wise, a keg of beer can get overcarbed if held at high pressure for awhile, but then it comes out all foamy and the glass you get may actually be less carbonated than if it poured properly.

Not saying you don't perceive a difference but I don't know any reason why you would either.

I can drink 20 Natty Lights out of the can with no headache...but a 20 ounce Dos Equis at a Mexican restaurant makes my head scream for some reason. Could it just be nasty lines?

Well there you go. 20 Nattys = 1 - 20 oz Dos Equis.
