Your manual says to use a NLGI No. 2 grease for greasing the U-Joints. Valvoline 633 is a NLGI No. 2 grease, so Yes.

I had to get my U joints replaced and the dealership puts in the non serviceable type (No zerk fittings). Should I be concerned?

    Yes
If they used direct OEM replacement on your U-joints, you should get easily 75k+ miles even if you drive it hard. If you baby them, 150k+ on your U-joints. So in like 7 years, when it comes time to swap them out again, get the greaseable joints.
