Fast.....meal was fast......you got some quick & tasty meal suggestions ?????

    My bride has had a horrible week at work....and is going to resign from her position. Works for a horrible boss who lacks basic human decency and is very manipulative. I've met the woman....and can agree completely with my wife's assessment and decision to leave. I've managed high functioning teams for over 25 years and I can say without a doubt that her boss wouldn't make it 6 months in my environment.

    She called me on her way home and said she was done....done....done with the madness. I asked what I could do to help....and she said, "Cook up something good".


    Granted.....the phone call came as she was beginning her commute home.

    I'd planned on cooking tomorrow.....not this afternoon.


    I was road weary and beat down from a crazy workweek of my own. Mind was cloudy.....what to make on the fly ?


    From phone call to the table was 30 mins.....with stuff on hand, including some leftovers.


    She said it was great and just what she was hoping for and was grinning throughout the meal. Good stuff for this old dude. Got'r done on the giddyup.


    Went a little something like this.....

    Grabbed some "pizza" sauce outa the cabinet.....and a box of high protein-high fiber pasta and made it ready. Doctored up the pizza sauce on the fly and it really tasted purdy good...all things considered.


    Added some Vidalia, Italian seasoning, parsley, garlic, peppa and bay leaves and got it on the simmer.

    Brushed some olive oil & Johnny's Garlic Spread on some bread and heated up some leftover bacon-wrapped meatballs and it all came together. Hit it with some grated Parmesan cheese....

    The colander and plate used were given to us by an angel of a woman who is the sweetest woman you've ever met....the wife of my mentor at work, RIP, who we followed to our relocation 20 years ago. She's an amazing cook and her Italian roots come through bigtime. Sweet soul. I can only imagine how much she'd laugh at my rushed Italian meal. She does old school Italian cooking. I'm going to invite her over soon and I'll see what we can come up with in the kitchen.

    At least this rushed meal had my wife grinning and smiling the whole time.


    Bamsucka !!!!! Workweek just erased. Time for the weekend fun. :flag:

    Oh Man, sorry to hear. Some bosses (the bad one's) just don't realize how much they effect us and those we care about. Great save on dinner!

    If you like chicken tacos or quesadillas....

    Store bought rotisserie ckn, can or two of Rotel maters (depending on how much maters you like).

    Pull the bird off the bones, sauté quickly with some olive oil to give it a little bark/crunch. Add the Rotel (juice and all), and warm thru. Then either into some tortillas for tacos...or onto some quesadillas for ckn quesadillas.

    Top with salsa and sour cream if you like....

    A quick thing I make is a 16 oz box of elbow pasta, boiled and drained, then put back in pot and stir in a whole 28 oz can of whole tomatoes with the juice. Break apart the tomatoes a bit as you stir, season with lots of black pepper, serve with good garlic bread. I’m a Parmesan freak and usually this doesn’t even need it IMO.

    Not really a fridge dump dinner but we do a box of farfalle, one rope sausage of your flavor sliced in half length wise and then cut into coins (quartered). I either grill the sausage or pan fry. Steam or roast broccoli.

    When all are cooked, mix them together with some sautéed garlic, a little olive oil and/or butter, and copious amounts of shredded Parmesan to your liking, then serve.

    It’s easy, inexpensive and pretty tasty. Especially leftovers.

    Farfalle... that reminds me, I boil up a 16 oz box, drain and return to pot with a whole stick of butter, get the butter melted and mixed then throw in a few (or a lot in my case) thin sliced green onions, stir, then add pepper and parm. Done. No protein, but definitely could add whatever meat to it.

    Wife worked an event an promoted her department's programs.....and late afternoon she let me know that their eats were okay.....but not substantial.


    She gave me a ready time....and I took inventory.



    Fettuccine Alfredo was in order.


    Broke out the colander that our dear friend, Italian cook par excellence, gave us.

    Looks like a winner!
    We use a rope sausage and a package of Vigo red beans and rice or black beans and rice....cut into coins then quarter, fry with some onions add the rice and cook the rice per package instructions about 25min if I remember correctly. stir periodically at first then once at the end.

    Alfredo... mind sharing how you make it? There’s so many ways to do it, seems like everyone has thier fave.

    Edited to add butter or oil to mine. Totally skipped my mind.

    I have started to prefer sauceless pasta, outside of pesto or something like piccata.

    Thanks everyone.....getting fast eats to the table has been the norm the last couple meals. It's messing up my grilling, though. I need to fire up some coals today.



    This alfredo sauce came straight out of a jar, lol. I did add some butter, lime juice and ground pepper on top (I put that on everyfreakingthing...my peppermill gets a workout every day).
