    Hilarious right there ^^^^^^ and so dang true, at times.




    That was actually my biggest hurdle yesterday on my beer/ingredient run.....finding avocados that were ripe but not overly so. I was able to get a few that were "in the window" I was hoping for.

    As soon as I got 'em in in the bowl I hit them with lime juice in hopes of keeping them green as long as possible.


    Fresh guac is some great stuff. So easy.

    Lately, I've been simplifying mine, too.....leaving out the tomatoes and garlic.....just avocado, white onion, cilantro, lime juice, jalapeño and S&P.

    Thats about all I put in mine, maybe a dash of garlic powder. I add juice of one lime and some lemon juice also. Then IF, IF theres any leftovers cover with plastic wrap and push the plastic down all the way covering the Guacamole. It usually keeps good for about 2 days.

    Sounds great.


    Mine kept under a day, lol.

    Went to make some lunch a little while ago......just a small amount of guac & pico left. No shells. No chips.

    Just some of the flounder & shrimp. Taco-less fish tacos were had.


    Made for a tasty lunch.

    I do that too, the plastic wrap tight on top of the guac, no air whatsoever. Keeps for 2-3 days easy.

    I noticed if you go light on the lemon juice it turns quicker. If you have at least one lime and 1tbs of lemon juice it seems to stay the Guacamole color longer. This is one thing I never buy pre-packaged...I always worry about getting some kind of stomach bug from packaged guacamole...

    Plus it ain’t nowhere near as good as fresh, too many preservatives, can taste them. In a pinch, I go to a good mex restaurant close by and buy a 16 oz tub from them, all good!

    Just wanted to say.........if'n you are looking for more power in your Taco...........it's easily available.



    I was able to get 3.75 hp from this mod.


    YMMV.....depending on which smoking wood you use.

    I'm about to fire up Ole Red in a few minutes. Gonna do a mixed grill and cook up some eats that will get me through the workweek.

    She's been fighting off what she is calling a cold. I'm guessing it's simply the results of what happens when pollen gets kicked up. Glad for the heavy rains overnight.


    Used enough spicy flavors to kick things up a notch for what turned into one of the best breakfast meals I've made in a long while.

    Potatoes browned....then tossed in the Vidalia & pepper....after a bit I added some Meat Church Fajita rub.

    Hard not to stand there and graze on that stuff ^^^^ :)




    Wrapped us up a pair of burritos with all the above in it along with some eggs & cheese. Added some of the stuffing as kickers on her plate.

    She'll likely eat 1/3 of it.....but I'm gonna destroy mine. :D

    Haven’t tried it.


    What is it targeting: brisket, pork shoulders, ribs, wings, chicken, fish or other?

    I pretty much am dialed in on specific favorites on each.

    I look into that rub and see.
