I'm going from 16x7 stock rims to 16x8 rims and I have 32 in ko2 does anyone think I will have a hard time fitting them in the tire correctly

What size are your tires? 265/75-16?

Cool little trick here, tire manufacturers list a thing called "approved rim width range" which will tell you what width wheels are safe to mount that tire too.
Like @JimboAnz mentioned this info can be found on the manufacturers site. Bfg's site isn't the cleanest because you have to download a huge document to get the info needed, but tons of other site list this info too, like tire rack for example.

They can only fit a width of 7.5 so it looks like I can't fit 16x8

Rim Width Range = 7"-8". You'll be fine.

meas. rim width (measured rim width) is the width of the wheel used when they took all the measurements for the tire. rim width range is 7" - 8" you're 100% safe with a 16" x 8" wheel.

16x8 with 0mm offset and 4.5" back spacing is a perfect fit to our tacomas (those are the specs of the pro comp wheel you listed btw).

You'll get a slightly wider stance and should look good. About even with the flares, to a hair outside.
