I am wondering why is the rear diff capacity different between a long bed and short bed ? Should be the same diff, right?

I don't think it varies between beds, more like between trims. OR has the biggest diff that takes 4.2qt.

Why would the long bed with a locker use more fluid than a short bed with a locker? It’s the same diff?

Nope. MT vehicles, no matter the trim, have the same rear diff as the OR. AT trucks that are NOT OR or Pro have a smaller rear diff.

Can some one clarify I’m planning on doing a front&rear differantial fluid change on my 2017 Tacoma Trd pro manual but after doing some research I was told I’d have to use 75-90 GL-4 not GL—5

    GL-4 for MT.
    GL-5 for Diffs.
