What brand pastrami do you use Pete? I know you work magic with the camera and make everything look good, but the pastrami in both pictures looks absolutely amazing!

I have to second that, don't get me wrong, I love bacon, but a good piece of red meat is tops any time.

Bacon is easier and more convenient and can be added to anything to make it better... other than the convenient part, I guess steak makes everything better too.

I really like those iron skillets and I need to start using mine more. I dont have a big pan like yours but just the smaller pan sizes.

Tonight the 08:00 service at our church is providing theevening meal for homeless families under the Prince Georges County Warm Nightsprogram. For the past three years I haveprepared roast beef for the dinner. Iusually use a chuck roast because the fat content is higher and lends itself to grilling better than other cuts of beef.

I rubbed down the meat with garlic, Montreal SteakSeasoning, cracked black pepper, and Smoked Paprika. I also did two additional roast the same but added McCormickred pepper,

    On the grill!

    DSC_0678_zpsea40bc42_615439a49bbb9458704e910e56a72f6b49253848.jpg

Finished cooking. Only took an hour and a half.

Sliced up and ready to go into the serving dish.
