    Holy shit. I don't think I've ever had a turkey that looks like that. Except for the Great Dad's Thanksgiving Barbecue Grease Fire of...uh...2005?

    But that was less red and more black. A lot more black. But...it was good!

    Yeah, this is my second attempt smoking a turkey. I soaked it in a brine for 24 hours then I slow smoked it for 11 hours at 160°-180°.

    Thanks for the birthday wishes everyone! Lookin' good in here! Weez, thanks for the sammy cake. :) Ry Ry. Watch out for those chiles. ;) I had a mishap about 7 or so years ago. Busy Saturday night at the restaurant and was cutting jalapenos and had to take a wizz. Got back on the line and a few minutes later my man junk was set aflame! :D Had to make a mad dash for the bathroom with my package in the sink and the cold water full bore! So, yeah. Be careful. :)

    It could be worse.

    A buddy of mine worked in a *nameless* pizza shop, and didn't wash his hands quite as well as he had thought. I should also mention he was 6'2", 300-320ish, and shaped kinda like a pear.

    And until you've tried to keep a straight face when a friend....a fat friend...tries to explain how he got a yeast infection to his boss, and why he couldn't work for a couple of days...

    I found a butcher this week who had made batches of andouille and hot italian sausage.

    Got a couple pounds of each as he was selling out.

    Dear lord this shit is AWESOME tasty with great fresh sausage in it

    Des Moines, IA has a huge Italian background. We have a local sausages place that makes the best sausage I've ever had. They make something like 2000lbs a day. Almost every local restaurant uses them.

    The first time I made this recipe, it was amazing with a decent kick.

    I am not much of a football fan (I grew up playing rugby, so football is for sissies :cool:, but that's another story)
    Anyway, not liking the sport does not mean I can't use it as an excuse for good eats...

    Smoked/grilled some spare ribs (also a pork butt, but that's for later this week)
