    Try seasoning with food grade Flax Seed Oil. It’s has a different viscosity than other cooking oils and bonds differently/better.

    Any one have a recipe for elk steak? Buddy gave me 40lbs. I've never cooked it before. Heard it's not as tender as beef.

    elk makes a good Salisbury steak also, thats about the only time I like steak medium or past that.

    how thick of steak? If you like medium rare Id only go about minute to minute and half per half inch of meat. If it was a bull it might be a bit gamie. Elk is quite lean but has great flavor IMO.

    I decided to get one of those smoking guns I keep seeing on TV. Tonight I cooked up a couple of burgers on the stove and afterward put the patties in a plastic container and blasted them with Cherry wood chips smoke.

    Brioche bread, Angus grass fed beef (with OXE seasoning), pineapple slice, tomato slice and lettuce. Hawaiian BBQ sauce, mayo and Texas Pete hot sauce.
    home made herb encrusted waffle fries.

    Quite well. In 5 minutes it infused the meat as much as 30 minutes in a regular smoker. I have Cherry, Alder, Oak, Hickory and Apple chips so far.
