I like driving a two seater, but the small storage containers aren't enough to get full use of my access cab. I'm open to installing a fold-down seating option or a flat deck in the back to increase storage- really anything to get better use out of that space.

Anyone who can link me somewhere to buy this type of equipment or who can show me pics of DIY solutions is much appreciated

Potentially the easiest thing that you could do is order up two of these:
    https://www.amazon.com/gp/product/B00B6K4V80

They perfectly level out the rear to the top of the storage bins. From there you can add a panel or whatever.

With a small mod to the lid to trim out a couple of the ribs, my compressor lives in one of them.

Get a board, cut to size. Have a beer and look at your work.

I think you'll want to browse this thread https://www.tacomaworld.com/threads/rear-seat-delete-decks.632134/ Lots of great creative options running the spectrum of cheap to pricey and quick fix to meticulously finished product.

There's also some kit options available for purchase and they're mentioned in that thread, but to save you the trouble: one is by a company called Goose Gear and here's a link to the other one made by a member https://www.tacomaworld.com/threads...cab-tacomas-double-cab-and-access-cab.728175/

I determined that the recycle tubs my office was throwing away were an almost perfect height. I combined two tubs with two tool boxes to make a very sturdy base in the rear seat foot wells for a platform.
I did not want that platform to ride on & rub the plastic trim covering the compartments in the rear (where jack & jacking tools are held). That's why I said the tubs and tool boxes are almost a perfect height. With the other item I found to use, the platform clears the trucks' plastic trim nicely.

That other item is a "stop strip" for a garage floor. (To contact the tire and let the driver know to go no further.) I have one for each side. They don't flex and are the right height to line-up with the tubs & tool boxes. I then sit two plywood platforms on top of them, that way I can access each side individually. The plywood is not hinged as it is not permanent. I am still in work coming up with an aluminum rig.
The plywood has car trunk carpet on top and split rubber hose around the edge (as a bumper).

In this photo you can see the yellow stop strip and the tool box keeping the wood off of the trim. The bungee is to keep the tubs pulled to the center when I'm not running the wood top nor the tool boxes. They are not necessary:

This photo has the platform in place (there have been slight changes since this photo):

This shows the theft deterrent cable on the tool boxes (anchored to my seat frame). It also show the recycle tubs, barely:
