Your stock battery will be more than sufficient to power both

Optimas have the same if not less CCA than the stock battery. The only advantage of having an optima is being spill proof, and the only advantage of yellow top is that its deep cycle, thus meaning you can discharge the hell out of that battery and it will recover. So unless you plan on turning your truck upside down, or running it for long amounts of time with everything on, (which will still leave you with a dead battery), stick with a stock toyota or similar battery.

FYI your LED lightbar will draw less than your headlights will. I push over 700 watts on stock battery with my 'system'. It doesn't hold a reserve for long, but only at the loudest of volumes do the lights dim, and barely.

a smaller secondary battery hooked up to an isolator couldnt hurt. especially since you may add more and more

What amp and subs? I highly doubt you're feeding 1800 watts into 2 10s

I would be looking at the amp hour requirements when the charging system is not running or not providing enough power for the electrical load, i.e., at idle. For additional information, please see Section 5 and 7 in the Car and Deep Cycle FAQ on www.batteryfaq.org.
