I've been reading about backspacing and tire size but I want to make sure that they'll fit before I actually spend the money!
Wheels: Pro Comp 7033 -6 offset 4.75 Backspacing
Tires: 285/70/r17 (should be a 33x11.25" tire right?)

This will be on a 3" lift.

4.5" backspacing would be better, but people do run 33's on 4.75" backspacing, it just requires a little more trimming is all.

So lets say you had a rim with 3.75" backspacing it would fit better and one with 5" backspacing wouldn't fit as well?

No the 3.75 would push the tire out pretty far and can lead to rubbing on the outer edge when turning. 4.5 has been shown to be the best balance.
