I have a 2016 Sport access cab with stock suspension. My understanding is that 265/70 is the largest tire size that can fit on this truck without rubbing. I recently bought some KO2s from Discount Tire in what I thought was that size (for mounting on new 16" wheels), but when I got home I realized the store had actually given me 265/75 instead.

Can anyone tell me if a 265/75/R16 tire will rub on a 2016 Sport with stock suspension? Do I need to go exchange these tires?

Those tires fit fine. 265/70 in 17, 265/75 in 16.

You'll be just fine. They will look better in the wheel well too.
