    We've run some cook offs on here to show off the great cooking skills of Tacoma World. The last one can be found here.

    Now it's time to run it back for the late spring/early summer! More prizes,

    This contest is an open category, meaning you can cook whatever you want with whatever rub or seasoning that you desire!

    There is also an Pitfaced BBQ category contest being run here that does not require the use of our rub that can be found here (link coming).

    ***The Contest***

    Think you cook better than anyone else in the Tacoma World community? Prove it by submitting a picture of your best dish for a chance to win great prizes.

    Submissions are being taken now (see details below) through July 7th. Beginning July 8th, the Tacoma World community will be deciding the winners by voting for your favorite dish in the open category.

    Important dates:

    Submissions will be accepted between now and 11:59:59 p.m. on Sunday, July 7th.

    Voting will take place from July 8th through July 14th.

    Prizes are still being compiled and allocated, but include:

    - Pitfaced BBQ Meat Massage and Spicy Meat Massage

    ***How to Enter***

    1. Cook your go-to, show stopping dish (go big and get creative!). Note that it doesn't have to be smoked/grilled. If you fancy the skillet, oven, crockpot, or whatever else, make it happen!

    2. Take a picture of your dish framed however you like. Make it look good!

    3. Put your submission in to a single post in this thread. You can post multiple pictures of the same dish, but only the first picture will be used when I consolidate all submissions to a single post for voting.

    The forum's polling options limits me to 20 choices. Currently, the plan will be to limit this to 20 submissions. If there are more and we can come up with a reasonable workaround, I will try to implement it.

    From now through July 7th, you can post your submissions and I will begin preparing them for voting, which will start on July 8th. The submissions will go in the reserved posts below and a poll will be added once voting opens up.

    Here we go... Homemade soft pretzels and some beer cheddar dip. Roux made with bacon grease and a good heaping tbs of spicy meat massage and a few pieces of bacon crumbled up in it.

    I think I'm going to make an executive decision, here. In all of my efforts to try and find a time that worked best for all of the contestants, I didn't pick a time that worked well with my schedule. As such, I haven't done much to get this thing promoted or had the prizes put up in a timely fashion. What I'd like to do is extend the deadline by a single week. That'll give me time to get the prize packages listed and take a good week and a half to help pimp out this contest. There are some AWESOME prizes donated by members of this board and they deserve some credit, rather than just slyly sending them out without the pomp and circumstance they deserve.

    Working on the pictures of everything now.

    For anyone that already submitted, if the extra time gives you the opportunity to cook an entry that you didn't have time for, you're welcome to submit something else. The entries put in by the end of July 7th will be the final entries! All other rules still apply.

    My best brisket. I ran out of Pitfaced and will need to order more so I used another rub for the night.

    The end result.

    I started with a 10 Lb uncut brisket. After cleaning up the excess fat I marinated it.

    Injected with:
    4 oz apple juice
    1 oz worshy sauce
    1/2 oz chipotle hot sauce
    2 oz maple syrup
    1/4 cup brown sugar.

    sweet and spicy. I used about 2/3 of it. I had some left over.

    Dry rub mustard for stick, Weber KC BBQ dry rub heavy, OX Roast and Piccantissimo lighter coating.

    I cooked it overnight in my vertical pellet smoker.

    When it was completed the next day it looked like this.

    It was the most amazing chunk of meat I have ever cooked. I'm, sure it might have tasted a slight bit better if I had more pitfaced left.

    Edited: to add the finished placing with smoked baked beans and smoked salmon that were along for the ride.

    One of my family's favorites is wings - so here it goes - Grilled some wings with the smoker box on the side for a little touch of smoke. Then glazed with a spicy garlic sauce and back on the grill for a little carmelization of the sauce. Also added a few ears of corn covered with sriracha mayo mix. Served with seasoned curly fries.

    Ok, here goes nothing. Made this for dinner tonight, a little surf and turf. Costco tri-tip smoked on the Weber kettle with some hickory chunks and then seared to temp on the gas grill :crapstorm: and some nice big lemon butter shrimp skewers from Haggen. Also since it seems like it's all the same guys from the meats thread to the whiskey thread I added in the JD no.27 that I opened tonight for bonus points. I tried it for the first time doing the JD distillery tour last September and it is just as smooth as I remember.



    Only my second time doing the tri-tip roast this way but it most definitely won't be the last, soaks up a decent amount of smoke flavor in the short time it's smoking but still comes out butter tender. A friend turned me onto this seasoning doing tri-tip a few years ago too and it's amazing it you like it a touch salty, it's only sold in stores in Southern California but you can order it on Amazon for a decent price.

    A friend of mine was volunteering at a spirits event in Seattle a few months ago and picked up this bottle for me. I have seen it at one of the Total wine stores in Seattle on the shelf though.

    I think it was originally intended for distribution mostly in Europe but they recently started to distribute across the US too.
