    Coarse semolina will do the same thing as corn meal if u prefer :)
    Also use a wood peel for building/launching the pizza and a metal peel for turning and removal

    Don't use too much and knock it off a bit. I used to HATE that crunch from me mum's pizza, but now that I bake, doan notice. I do use relatively medium grind. One guy's coarse is another guy's fine with corn meal.

    This is what I mean by course ground. If the ( tn ) in your user name is for Tennessee you might have better luck finding some stone ground grits similar to these? Semolina is also a good suggestion. Grits are basically the same thing as Polenta if that helps?

    Pepper-faux-ni and “sausage” on the left and roasted Brussels with goat cheese and balsamic reduction on the right. Both thin crust, both got the habenero honey and red pepper flake treatment, and both were absolutely delicious.
