Check the cabin filter for moisture and/or see if anything got into it.
Also the AC/Heater box under dash has a drain so when AC running it should drip out that under front passenger side.

I recommend Klima Cleaner for the AC coils followed up with ozium spray; both from Amazon. Klima cleaner spray in the ac drain line till it foams up then it will drain when it's ready. Ozium in the intake vent on the cowl afterwards. Definitely replace the cabin filter too.

Maybe not related to your problem--I try always to turn off the AC before stopping to allow the system to dry out. That avoids the smell.

This cleans the whole system. The suburu kit is cheaper than toyota.

I also have this issue. Had my 2021 Tacoma detailed and it smells great until trying to blast the A/C the sweat smell comes back for a few mins.

Just a quick note—based on the instructions at the link I provided above—I didn't use the entire can of AC duct cleaner as @IRONCLADBARREL suggested but only about 1/2 of the can; however, I did follow the rest of his instructions. Additionally, I got a K&N cabin filter and clean it once a month and I keep the Ozium canister in the rear armrest cup holders so I can easily open or seal the top depending if I'm driving with the windows open or closed. So far this has prevented the gym smell from returning over the last couple of months and the only comments from passengers now are how fresh the truck smells.

I used the Meguires bomb on my last truck and it did wonders. Depending on how sensitive one is to smells the first few days can be a bit much but I garage park my vehicles so I was able to roll the windows down and that helped.

Even when the fragrance disappeared the offensive odor that I was trying to eliminate didn't return. This was after febreeze, baking powder, removing the seats to shampoo and none of that was as effective as the odor bomb.
