Didn't know there was a thread for this.

Just did a slow cooked carnitas a few days ago.

    4-5 lb boneless pork shoulder/butt

Dry rub: granulated garlic/chopped dry onions/oregano/salt/ground pepper/cumin/cayenne pepper

Wet: 1/2 cup OJ, 1/4 cup chicken stock, juice from two limes

Coat meat with olive oil, dry rub.

Set the rubbed pork into slow cooker on a couple of bay leaves.

Pour the wet ingredients around the pork to NOT wash off the dry rub.

Cover, slow cook for 8-10 hours.

Last hour, pull apart the pork and remove cover to let all the liquid to reduce to practically nothing. This concentrates the flavor AND the carnitas needs to be fairly dry for the final step...

Heat up enough oil to coat the bottom of a cast iron skillet and brown up a thick layer of carnitas on one side, flip over to brown up the other side.

Serve for tacos, burritos, tostadas or simply on a plate with rice and beans:

Nice! I hate cleaning up the croc pot! Definitely going to be using those in the future!

I tell you what, if you ever go to Abilene TX stop in to this place called "Joe's Pizza". They have the best rolls anywhere! I dont even think they use day old ones but I'd eat them if they had them. With some garlic oil/butter spread and minced garlic and parmesan on top. Scroll down about 7 pics and you can see the rolls.
